Document 49907 CHICKEN TETRAZZINI Chicken Tetrazzini was named in honor of Italian opera star LUISA Tetrazzini (1871-1940). A classic dish of cooked pasta and chicken in a sherry-Parmesan cream sauce, it was created by Chef George Auguste Escoffier of The Savoy in London. If the saying "It ain't over till the fat lady sings"" bore any truth whatsoever, the curtain would have fallen as soon as Luisa Tetrazzini opened her mouth. She had a highly polished mastery of her art, with a sensational command of the most difficult and florid music. She was also witty and good-natured, with a flair for fun that made her splendid in comedic roles. Tetrazzini sang notably in Rigoletto and La Traviata. Fine condition.
